Not much new to tell you today. Cage people aren’t answering the phone. Message is that nobody is available. Got the correct missing knife, certainly not Sabatier made in France, but a nice, weighty drop forged knife for a reasonable price. I’m learning to cook in limited space, though I don’t think my pressure cooker will work there.. Can’t find mortgage payment slip sent by mortgage broker who sold my mortgage to the bank I hate most. Must call and get payment info. Light day today.

Peppermint Taffy
- 1 tablespoon plus 1/4 cup butter, cubed
- 2 cups light corn syrup
- 1-1/2 cups sugar
- 2 teaspoons peppermint extract
- 1/2 teaspoon salt
- 6 drops red food coloring, optional
- Grease a 15-in. x 10-in. x 1-in. pan with 1 tablespoon butter; set aside.
- In a heavy small saucepan, combine corn syrup and sugar. Bring to a boil over medium heat. Add remaining butter; stir until melted. Cook and stir until a candy thermometer reads 250° (hard-ball stage).
- Remove from the heat; stir in the extract, salt and food coloring if desired. Pour into prepared pan. Let stand for 5-10 minutes or until cool enough to handle. Divide into 4 portions.
- With well-buttered fingers, quickly pull one portion of candy until firm but pliable (color will become light pink). Pull into a 1/2-in.-wide rope. Repeat with remaining candy. Cut into 1-in. pieces. Wrap each in waxed paper. Yield: 1-3/4 pounds.
Editor’s Note: We recommend that you test your candy thermometer before each use by bringing water to a boil; the thermometer should read 212°. Adjust your recipe temperature up or down based on your test.

Left off another blunder yesterday. I’d ordered two nice knives and something else from Pfaltzgraff. The package came very quickly. In it was the larger item I ordered, one knife and Kitchenaid measuring spoons. I called, and the packer hadn’t initialed the packing slip. I had to read the item number on the measuring spoons to the customer service rep so she’d believe me. They are sending the missing knife (I now realize she didn’t ask which one), and were nice enough to say I could keep the spoons. I’m so excited. I can keep the $2.99 spoons, and not spend $5 to send them back. That’s a relief. I am waiting to find out what today’s adventure will be. Probably bird cage oriented, since that person never called me back.

The craziness never ends. My over the range microwave was delivered yesterday, and I was banished from the room while they installed it. Lots of drilling through the wall tiles. I finally come out to see it, and it’s was too close to the stove. The installers must have known, just didn’t say a word. They said it’s not too close. After they left, I measured. Legally, it has to be 18″ about th stove. It’s 13½”. I spent the rest of the day calling Home Depot and crying. The manager offered me $50. Is he insane? The installation cost me $100, and the electrical cost me $185. My walls are ruined if I take it down, and it’s a fire hazard. I’m in a state of hysterics, and not the fun kind. If the installers had told me it was going to be too low, I could have had a couple inches of cabinet cut back without hurting anything. Now I don’t know what to do. Grrrrr! Send me any ideas.
