ByeBye KItty (aka BBK) came in for a while last night, but cried to go out, so out he went.  He slept on the outside chair, and was gone this morning.  Maybe that’s a sign of warm weather coming.  One can hope, right?  I need to order Frontline Plus if he’s going to be semi-indoor.

You know how frustrating it is when you want to copy an image, a recipe, a card picture, or just about anything, and it’s copy protected.  Not from Jing it isn’t.  Shhhhh!   I use this all the time.  Great program.

I found this recipe recently and now use it all the time.  I usually use brown rice (healthier) instead of Jasmine, but for company I would definitley use Jasmine.  It’s really good.  Great for “over rice” dishes.

Lemon Coconut Rice

Lemon, coconut milk and jasmine rice make this mouth-watering side a welcome addition to just about any main entree. You can’t go wrong with this simple dish.

2 cups jasmine rice, rinsed until the water runs almost clear (2-3 times)
2 1/2 cups stock or water
1 tsp. salt
1 14 oz. can coconut milk
Juice and zest of 1 lemon

In a pot with a tight-fitting lid, combine all ingredients. Bring to a boil over medium-high heat, cooking uncovered; stir occasionally. When rice boils, cover pot and reduce heat to low. Cook 15 minutes. Remove from heat and let sit with lid on for 10 minutes.

ByeBye Kitty, who’s been spending almost all his time on my chair, didn’t come home last night (dirty stay out), and I was a bit worried, but about 6:30 this morning, he came back and was starving.  I’m getting more and more attached to him.  Now I’ve got to go get his food and water bowls before management makes their morning tour.

Does anyone wear the fitness walkers, Sketchers, Reebok, or the ones Payless puts out, don’t remember the name?  I’m thinking about them, but would love some feedback before I get them.  BTW, Sears has the Dr Scholl’s ones for $45 this week.  They have reviews, but I always worry about who write them, and their legitimacy.  That’s true everywhere.  I’m not picking on Sears.

Good morning.  It’s Monday, and I’m back.  Just did some food shopping over the weekend, nothing special.  BybBye Kittie spent the whole rainy day yeserday on my stoop, and demanded petting by everyone in and out of my apartment.  Today he’s gone.  Thus is life.  Maybe he doesn’t like the new brand of food I got him.

 
At Sam’s Club I got a great deal on coffee.  Kona is one of my favorites. and I really enjoy freshly ground coffee.   Thisis a 2½ lb bag of Mayorga  Coffee Roasters, Whole bean Hawaiian Kona Blend.  It was only $4.31, a great buy.  Got one for my daughter too.  If it sounds like something you’d like, you should get it before it’s gone.  BTW, I haven’t tasted it yet.  Want to finish off my good old faithful, Maxwell House.

I live in an apartment in a complex, and there is a little stoop (old fashioned word for porch) in front where I keep a chair, and a small table with my window box where I grow herbs in the summer.  Anyway, the chair is taken, not away, but slept on by ByeBye kitty, a beautiful, feral cat, who has decided he wants to live here and runs inside whenever I open the door.  I guess it’s my fault.  I’ve been feeding him – outside – every night.  I have birds, and am a bit afraid to take him in.  The fact that they add $40 to our rent every month if we have a cat, really dissuades me too.  I’m very torn.

I must have way over 100 of these hangars from HSN.  They don’t make that much more room in my closet (when spans several size ranges), but they’re not as tight and wrinkled.  With free s&h this is a good deal for starting out.  I’m always buying more, sometimes as gifts.  Luckily I had a 10% off coupon.  I don’t know if it will work a second time, but it’s CAP2-A9F9-F7F4-2565.

Does anyone shop at Sam’s Club.  Nothing (almost nothing) pleases me more than getting a great bargain.  I got this Hamilton Beach Diecast 400-watt Stand Mixer | Overstock.com mixer at Sam’s for about $50, and this Overstock one is at a clearance price.  Of course I always wanted a Kitchenaid, but never had the excess space and money at the same time.  Still don’t have the space, and it’s on a shelf I can’t reach, until I need it, but this Hamilton Beach is the sturdiest and extremely powerful.  Couldn’t resist the price.  The trick with Sam’s is to wait till they are very low on an appliance, like one in the box and one on the shelf.  Sometimes they’ll mark the one in the box way down.  Sometimes they won’t, but it will sell, and then the (unused) floor model will go back to the clearance area, or even stay on the shelf for a pittance of the original price.  It usually works for me.

One of the OTHER little tricks that I have is to PRE-TIP our room steward (as well as to slip a little extra to the person who delivers our room service goodies). On our last cruise, our steward made sure that our ice bucket was never melted and he knew in advance EXACTLY what we wanted. Extra cookies, sodas, etc. were always available in our cabin for us. We were able to get those great thick bathrobes as well as down pillows and the mattress toppers that are reserved for the more expensive cabins. Overall, if you pre-tip you will find the service to be NOTICEABLY better. Remember TIPS is an acronym for “to insure personal service” and pre-tipping on a cruise ship travel will insure this.

Yesterday someone sent me the following.  I’ve had no problems with Amazon per se, except and occasional delay in shipping,  I’ve only bought books from their outside sellers, and have been pretty lucky,  This is scary, and comes from someone I know and trust.
 

I hope I’m passing on useful info.  Please let me know what you want me to Blog.

 

Speaking of Amazon, I had an odd thing happen.  I bought a DVD from one of their alternate sellers and used my usual payment method, my checking account.  I’ve used this account with Amazon for a few years now and on other sites.  I got a message from Amazon saying the purchase was denied because the bank account did not permit the transfer.  They gave me the name of the firm that handles bank transfers for them and told me to ck with them since the denial came based on the firm’s info.
I did get in touch with the firm (Telecheck) and there is absolutely nothing wrong with the account and no denial was given to anyone.  They had no record of the alt seller or Amazon contacting them.
This kind of weirded me out as I wondered if the alt seller is working some kind of scam to get a credit card number from me or something – you know, instead of the bank account info.  They absolutely did not even try to get the money from the bank account.   So I cancelled the purchase.  Then I went to Amazon and deleted the checking acct info from my account.  Today, 2 days later, I re-entered the chkg acct info and purchased a book from Amazon (not an alt seller) and payment went thru perfectly.
Just a cautionary note to you as I have no idea what that was all about.

I also made a new dish (for me) this week.  Fish Tacos.  I took Sandra Lee’s Food Network recipe and tweaked it a bit, not too much.  Added garlic, and used fresh lime (she used bottled).  Anyway, it was delicious, and even my husband, who dislikes fish, ate it.

Crispy Fish Tacos

1  pound tilapia (or other white fish) fillets, about 4 (I used flounder)

1 cup all-purpose flour

1 teaspoon baking powder

Kosher salt (I added garlic granules)

1 to 1 1/2 cups water

3 cups canola oil (I used vegetable)

1/4 cup mayonnaise

1/4 cup sour cream

1 tablespoon hot sauce

1 tablespoon lime juice

2 teaspoon garlic, chopped

3 tablespoons chopped fresh cilantro leaves, divided

Freshly ground black pepper

8 corn tortillas

1/4 head green cabbage, shredded

Cut the fish into 1 1/2-inch chunks.

To make the batter, whisk together the flour, baking powder, and salt in a medium bowl. Whisk in enough water, about 1 to 1 1/2 cups, until the mixture is the consistency of pancake batter.

Heat the oil in a deep skillet over medium heat to 360 degrees F.

When the oil is hot, working in batches, dip the fish pieces into the batter and carefully add them to the hot oil. Cook the fish until golden brown on both sides and the fish is cooked through, about 4 to 6 minutes total. Remove from the pan and drain on to a sheet tray lined with a paper bag or paper towels.

To make the sauce, whisk together the mayonnaise, sour cream, hot sauce, lime juice, garlic, and 2 tablespoons cilantro in a small bowl. Taste and adjust seasoning with salt and pepper.
