Hubby surprised me last night.  He decided to take advantage of the Chili’s coupon I posted here a few days ago.  We did it Easter, and enjoyed it.  Of course after one of their large, top shelf, frozen margaritas, they could have given me diddlypoop and I would have sat there smiling.  We shared an appetizer (greasy) of fried onion straws and jalapeno chips.  So good, till I tried to lie down later.  Then Hubby had a new style burger, I can’t remember the name, and he loved it.  I had ribs.  Ribs make me happy, particularly after a margarita.  Then we shared a molten lava cake, which I only tasted.  It’s good.  I was stuffed, despite taking home half my ribs and corn.  Pretty good deal for $35, despite them not thinking I was entitled to free refills on my margarita.

I’m thinking this is a great idea, with great reviews.  I may call to find out maximum oven temp it’s good up to.  If nothing else, you can make brfownies.  Free s & h.

Okay, yesterday I called my lawyer to ask if anything on the condo came up.  She told me they didn’t answer her last call, but she’d call again, and call me back whether or not she gets an answer.  Good thing I didn’t hold my breath. 

I’ve been cooking.  Made a good chicken breast marinade with cilantro, lime zest and juice, jalapeno, splash of live oil & garlic.  I let the breasts marinate a couple of hours on each side..  Probably over night would have been even better, but it was really good.  I made a matching chimichurri today to put on the leftovers.  Cilantro, lime juice & zest, garlic granules (don’t really like eating unooked garlic), a roasted Anaheim pepper, corriander, cumin, salt, pepper & olive oil.  Just blended it all.  I think I liked it moe than Hubby did.

Still nothing on condo, but co-op agengt called around 8:30 lst night to tell me we can look at the other co-op around 4pm Wednesday.  Apparently an old couple (coming from kid that I am) is renting there, and it will take them some time to prepare.  Obviously they don’t want to move.  I think I”ll cancel.  Don’t want to throw anyone out of their home.  Have to fill in paperwork for here, since I”ll probably have to renew my lease.  I feel so exhausted, and it the rent wasn’t going up an additional $50 a month, I’d just stay.

The fact that my co-op real estate person was away for the weekend didn’t stop him from calling to make sure I’d look at something this week.  Condo guy called too.  Just checking in.  I’m emotionaly drained.  Didn’t even leave the house all weekend.  Apparently I won’t be moving before my next lease must be signed.  Totally aggrivated.  Hubby’s union just gave up raises for 3 years, and he’ll have to pay more toward his health insurance.  Rent going up $50 a month.  Life’s a bitch.

This recipe is from Taste of Home.  Think I’ll use 3/4 cup of skim milk with a tsp of buttermilk mix instead of evap and water, since I don’t have ff evap.  If you don’t have blueberries, you can always use chocolate chips.

Light Blueberry Muffins

  • 3 tablespoons butter, softened
  • 1 cup sugar
  • 1 egg
  • 1/2 cup fat-free evaporated milk
  • 1/4 cup water
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1-1/2 cups fresh or frozen blueberries

In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Add egg; beat well. Combine milk and water. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk mixture. Fold in blueberries.

Coat muffin cups with cooking spray or use paper liners; fill three-fourths full with batter. Bake at 350° for 27-30 minutes or until a toothpick comes out clean. Cool in pans for 5 minutes before removing to a wire rack. Yield: 1 dozen.

Saw The Tourist on Netflix.  Thought it was boring, and I guessed the ending about half way through.  Wish the next season of Dexter would come out on DVD.

Chili’s Coupon

Probably not my favorite restaurant in the world, but mine hs pretty decent food, and the margaritas are heavenly.  Coupon so well worth it.  We used one Easter.  It includes one appetizer, 2 yummy margaritas, 2 entrees, and one dessert.

Went to Subaru at 8:30 this morning for them to check noise in brakes and to detail the car since it was paid for and not done when I bought it.,  It all should have been free, but cost $88.  Somehow I think I got off easy.  They also had to update the software per recall notice.  What software?  We picked it up, and it was washed, and inside sprayed with new car spray.  They didn’t do anything else.  Grrrr.

Then we headed to Trader Joe’s.  Always  a fun shop.  Went to try the Tom Yom soup, but neither Hubby nor I liked it.  I’ll go out for it next time.  Bought 2 kinds of cheese, Cereal – their boxed Mapel Pecan is the best cereal anywhere.  Bought organic blue algave and tofu, with no idea what I’ll do with them.  Frozen Pad Thai in microwave now.  Bottle of their summer brew (beer) in the fridge.  Expensive bowl of soup.

Then we hit Pathmark.  Beautiful pork loin on sale, and boneless, skinless chicken breasts reduced to $1.69   Also salad dressing (Natually Delicious)  on sale and I had two $1 coupons.  Couldn’t resist.

Stop & Shop for Frozen veggies and Klondike Bars on sale.  Smuckers natural peanut butter too.  At least it will take us a while to starve to death.  Other than bread and fresh veggies, no shopping for at least two weeks.  Now, the real reason for this last trip.  When we originally got home, there were literally thousands of ants trying to get into my apartment.,  I thought the lawnmower blowers had blown dirt there, but Harry told me what it was.  I ran inside and came back with black pepper, supposed to keep them away.  They started to make sand castles with it.  Ran back in and came back with cayenne pepper.  They seemed to like this a bit less.I vaccuumed up everything I could, emptied the vacuum in a bag outside, and many, many ants are heading to the compacter.  We rushed down to Stop & Shop for ant spray.  Everything else we got there was superfluus.  This experience rates up there with my top 10 horrific afternoons.

Buzzin’ & Bargains

I know I haven’t been exactly blogerific this week.  I’m sorry.  I’ve been in a major headache.  If  you haven’t read yesterday’s comment and my response, I did not sign the contract.  Found out (after many hours of phone calls) that the very high maintenance on the co-op didn’t include heat, which nobody who works for the co-op seems to know (or want to admit), and with all the repairs, it just brings the cost too high.  The same co-op, with a view of the woods instead of the lake, and a slightly smaller deck,, is $165 less a month, and while costing more, is in great shape with newer appliances.  May go see it.  Still Haven’t heard from those hell hounds at Wells Fargo about the condo.  What is with them???

I have to have the car in the shop at 8:30 this morning, so won’t have time to write.  If I get home in time, I’ll try to give you some goodies.  If I don’t, have a great weekend.
