I’m sorry I haven’t been around for a while.  Not feeling great, and really being lazy about everything.  Some kind of crazy stomach thing.  May actually break down and see a doctor, eventually.

I do have a great recipe for you today.  Made it yesterday.  This is originally from the Hellman’s site.  I made a couple of small changes, and will give you my version.  I’ve always been kind of potato saladly challenged, but am so proud of this one.

Honbee’s Potato Salad
2 lbs. potatoes (5 to 6 medium), peeled and cut into 3/4-inch slices
1 cup mayonnaise
2 Tbs. vinegar
1-1/2 tsp. salt
3/4 tsp. sugar
1/4 tsp. ground black pepper
1/4 cup thinly sliced celery
1 cup finely chopped red onion
2 hard-cooked eggs, chopped (optional-I didn’t use them)
Cover potatoes with water in 4-quart sauce pot; bring to a boil over medium-high heat. Reduce heat to low and simmer until potatoes are tender, about 10 minutes. Drain and cool slightly.
Combine mayonnaise, vinegar, salt, sugar and pepper in large bowl. Add celery, and onion and mix to combine.
Add potatoes and mix gently till thoroughly coated. 
Serve chilled or at room temperature.  It was wonderful freshly made and warm.

Staying in the kitchen theme, and knowing you feel guilty about all those plastic water bottles, this is a great idea.  If you speak Japanese you may enjoy the audio, but all you need to do is watch.

Buzz, Video & Bargain

Not a very exciting weekend.  Stayed in, but didn’t accomplish nearly as much as I would have liked.  Did switch to summer bedding.  I never had a rough edge quilt before.  Ray-Ray seems to be quite amused.

Today is my birthday.  Grrrr  Anyway, guess, how I’m spending it.  Cooking, cleaning and shopping.  This is not a bad thing.  I’m having my sister, bil, daughter and the fella over on Saturday.  I really like entertaining, and this will be the first time we’re all here together.  Sister & bil going home at night, but the 4 remaining of us will go to brunch Sunday morning.  Sounds like a lovely weekend to me.

Much to do today.  Have to finish reading and making corrections on a approx 200 page deposition.  Promised I’d mail it back tomorrow.  I need to start seriously throwing out all the junk I don’t want to move with.  Horrifying how much I have.  If anyone is starting up a new household, don’t buy anything till you check if I’m getting rid on one.  I’d rather see things go to people.  Goodwill will be getting a windfall too.  Since I’ll be out much of next weekend, I plan on doing a major purge Sunday.  Saturday I need to shop a bit, and pick up more cartons.  Saturday night I’ll start.  I wish my stomach would settle down.

We had a pretty nice weekend.  Saw Spamalot at the Patchogue theater yesterday.  While the theater was a bit warmer than I’d like (to keep me awake), the performance was excellent.  We really enjoyed it.   Went to Olive Garden after.  My order came with the wrong sauce, but it wasn’t bad once you got past the spinach.  My sister’s order came reversed from her request, and had to be redone.  I think everyone enjoyed though, and the service was cheery.  After driving themto the railroad, Hubby and I did some shopping and headed home.    I’m glad I taped all my shows because I dozed through most of them.

The fact that my co-op real estate person was away for the weekend didn’t stop him from calling to make sure I’d look at something this week.  Condo guy called too.  Just checking in.  I’m emotionaly drained.  Didn’t even leave the house all weekend.  Apparently I won’t be moving before my next lease must be signed.  Totally aggrivated.  Hubby’s union just gave up raises for 3 years, and he’ll have to pay more toward his health insurance.  Rent going up $50 a month.  Life’s a bitch.

This recipe is from Taste of Home.  Think I’ll use 3/4 cup of skim milk with a tsp of buttermilk mix instead of evap and water, since I don’t have ff evap.  If you don’t have blueberries, you can always use chocolate chips.

Light Blueberry Muffins

  • 3 tablespoons butter, softened
  • 1 cup sugar
  • 1 egg
  • 1/2 cup fat-free evaporated milk
  • 1/4 cup water
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1-1/2 cups fresh or frozen blueberries

In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Add egg; beat well. Combine milk and water. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk mixture. Fold in blueberries.

Coat muffin cups with cooking spray or use paper liners; fill three-fourths full with batter. Bake at 350° for 27-30 minutes or until a toothpick comes out clean. Cool in pans for 5 minutes before removing to a wire rack. Yield: 1 dozen.

Saw The Tourist on Netflix.  Thought it was boring, and I guessed the ending about half way through.  Wish the next season of Dexter would come out on DVD.
