1/2 pound wide egg noodles
1/2 stick butter, melted
1 pound cottage cheese
2 cups sour cream
1/2 cup sugar
6 eggs
1 teaspoon ground cinnamon

Preheat oven to 375 degrees F.

This Week’s Rotisserie Chicken

Hi! Long time no see. When I’m depressed, and this is a helluva week for it, I cook. Actually this is cheat cooking. Super easy. I bought a rotisserie chicken at Sam’s, and they are always under cooked, and the skin is soggy, but they taste pretty good when you finish them. I rarely eat them as plain chicken.
This week, I cut it into 8 sections, removed the soggy skin and made chicken soup. I know you all have a recipe, but if you want mine, let me know. Then I remove the chicken and shredded it. I added some to the soup, but there’s plenty left I split in into two bowls.
In one, I added better than a cup of shredded cheddar and Adobo seasoning, dipped corn tortillas in enchilada sauce, placed chicken mixture in the middle, and rolled and placed them in a baking dish. This makes 6 – 8. I sprinkled more shredded cheddar on top, covered with foil, and baked at 350° for 20 min (convection oven), and then uncovered and baked an additional 10 minutes. Totally yummy.
From the other half, I made an original mashup. I mixed a heaping Tbs of Jerk Seasoning, (I used Walkaerswood mild, but will get hot nest time), with a little EVO, fresh thyme, and garlic powder, and added it to the rest of the chicken. Put it aside. I sauteed a sliced onion , added a diced up tomato, salted and peppered, and after about 8 minutes, added the chicken mixture. Cooked the liquid (from the tomato) down and let the chicken crisp a little bit. I was too lazy to make the rice and beans which would probably have gone well with this, threw on some cheddar,and just wrapped it up into a burrito. Very tasty.
I got 4 meals and a bunch of soup out of that one chicken.

I’m still alive and well, and living on Long Island. RayRay is still the sweetest foster cat ever, and my beautiful daughter married our wonderful son-in-law in August.
I haven’t started my holiday cookies yet, but I found that the easiest thing in the world to make, and totally enjoy is fudge. I made a batch and they went like wildfire. Pieces (of a new batch) will go on my cookie trays.
Fudge
3 cups semisweet chocolate chips
1 (14 ounce) can sweetened condensed milk
1/4 cup butter
1 cup chopped walnuts, pecans, mini marshmallows, etc (optional)
Place chocolate chips, sweetened condensed milk, and butter or margarine in large microwaveable bowl. Nuke 1 minute, and stir. Then continue in 30 second intervals stirring between each till chocolate is all melted and you can thoroughly mix, adding nuts, or whatever.
Line a brownie pan (8×8” or 9×9”) with parchment paper or aluminum foil to easily lift the fudge out (or butter). Pour the fudge into the pan, and refrigerate for about 2 hours. Take out and cut into squares. If you are layering them in a container, put some of that parchment between the layers.
Gain 3 pounds.
