Finally made my daughter’s soup, and it was woderful, and warming, and Autumny, despite the summer weather. I jacked up the seasoning a bit. Instead of 2 chicjken sausages, I used some Jimmy Dean HOT sausage meat, replaced one tbs of Italian seasoning with Cajun and a sprinkling of chili. My father would have said “It’ll grow hair on your chest”, though that is definitely not my goal Here’s the recipe:
Kale, White Bean, and Chicken Sausage Soup
6 cups chicken broth
2 chicken sausages
6-8 cloves of garlic, diced
1 medium onion
4 cups of kale (torn off stems and into smaller pieces)
4 medium-sized tomatoes, diced
15-19 oz. can of cannelloni beans
2 tablespoons of Italian seasoning
Sauté onion, garlic and chicken sausage until brown. Add kale and cover until wilted. Add chicken broth, beans, tomato and seasoning. Bring to a boil, then lower the temperature and let simmer for 15 minutes.
Can’t hurt to eat low cholesterol. I try to cook that way for Hubby, who’s is way too high. Real quick survey.
