My rent has gone up crazy high, considering I pay my own utilities. I must admit it’s not as high as some places around here, but it’s not kept up as well either. Still waiting for the new kithen floor I was promised six years ago. Anyway, I’m not looking to mow and shovel, so I’m looking for a condo, perhaps a co op, but I’m not as crazy abut that idea. Meeting with a mortgage broker today to see what jobless me can get. We shall see.
Anything for Gummies, right? Even healthy ones?
We always enjoy TGI Fridays. Just found this copycat recipe on allrecipes.com It’s used on a chicken topped green salad. I’d use it on everything, including as a marinade.
Cilantro Lime Dressing
- 1 jalapeno pepper, seeded and coarsely chopped
- 1 clove garlic
- 3/4 teaspoon minced fresh ginger root
- 1/4 cup lime juice
- 1/3 cup honey
- 2 teaspoons balsamic vinegar
- 1/2 teaspoon salt, or to taste
- 1/4 cup packed cilantro leaves
- 1/2 cup extra-virgin olive oil
Place the jalapeno pepper, garlic clove, and ginger into a food processor or blender; pulse until the jalapeno and garlic are finely chopped. Pour in the lime juice, honey, balsamic vinegar, and salt, add the cilantro leaves; pulse a few times to blend. Turn the food processor or blender on, and slowly drizzle in the olive oil until incorporated into the dressing. Season to taste with salt before serving.
I use Amazing Grace, but this sure sounds like it would be good with chocolate body paint (Halloween costume for stay ins). Perhaps, for this tiny price, I’ll give it a try.
